Bruschetta

Ingredients

2 large beefsteak tomatoes

4 gloves garlic minced + 1 whole clove

4 tbsp Basil, chiffonade (thinly sliced)

1/8 cup good olive oil

1/2 tsp freshly ground black pepper

Salt to taste

Baguette


Directions:

1. Small dice the tomatoes, and remove extra liquid. Add to a large bowl.

2. Add in basil, salt, pepper, minced garlic and olive oil. Toss to combine and then set in the refrigerator for at least 30 minutes.

3. Cut baguette into thin slices, brush with more olive oil. Toast in the oven at 350.

4. When the bread is toasted, remove from oven and rub with the extra garlic clove.

5. Top each slice with a tbsp of the bruschetta. Add balsamic vinegar if desired.
