Indonesian Spicy Coconut Green Beans

Ingredients

1 large white onion, diced finely

2 tbsp coconut oil

5 cloves garlic minced

2 tsp minced ginger

3 tbsp sambal

1 lbs frozen green beans

1/2 cup coconut milk

1/4 cup shredded sweetened coconut flakes









Directions

  1. In a large pot add in the oil and onions over medium heat. Cook until translucent about 5 minutes.

  2. Add in the ginger and garlic, cook until fragrant, about 3 minutes.

  3. Add in the sambal, green beans and coconut milk. Stir to combine.

  4. Cook over medium heat for 25 minutes until the beans are soft.

  5. Stir in the coconut flakes and serve.
