Fully Loaded Potatoes


Ingredients


1 lb. small potatoes

1/8 cup olive oil

2 tsp salt

2 tsp pepper

1 tsp dill

1 tsp paprika

1/2 cup cheddar cheese

5 tbsp chopped chives

1/3 cup sour cream

5 slices cooked bacon, crumbled (turkey or pork)


Directions

  1. In a pot add potatoes and boil in salted water for 15 minutes. Drain and add to a large bowl.

  2. Add the olive oil and spices to the potatoes and toss to combine. Bake in 350 degree oven on a baking sheet for 25 minutes, or in an airfryer for 25 minutes at 200 degrees.

  3. Remove potatoes once crispy, add to original bowl and toss with grated cheese. Top with chives sour cream and bacon crumbles. Top with more freshly cracked black pepper.
