Chipotle Pasta with Spicy Sausage and Roasted Tomatoes


Ingredients

1 box of pasta

2 spicy sausages

1 onion diced finely

4 cloves minced garlic

4 tbsp butter

2 tbsp flour

2 tsp freshly cracked black pepper

1 tbsp smoked paprika

2 tsp chipotle powder

1 1/2 cups skim milk

1 can roasted cherry tomatoes

Olive oil

Directions


1. In a large pot over medium heat caramelize the diced onion with olive oil and a pinch of salt. About 15 minutes. Add in minced garlic and cook for addition 2 minutes. Remove from pan and set aside.

2. In a skillet cook sausage with olive oil. Let rest for 10 minutes, then thinly slice it and set aside.

3. Melt the butter and add in the flour in same pan and make a roux. Slowly whisk in the milk (1/4 cup at a time) until a smooth sauce forms.

4. Add in paprika, chipotle powder, salt and pepper and whisk to combine. Add in the garlic and onions. Set aside.

5. In another large pot bring water to boil and add a tbsp of salt. Boil pasta to al dente.

6. Before you drain your pasta reserve 1 cup of pasta water. Add noodles into the sauce, along with sliced sausage and drained tomatoes.

7. Toss until evenly coated with 1/2 of the pasta water (add more if the sauce needs to loosen).

8. Serve with extra pepper on top and shaved parmesan.
