Garlic Parmesan Polenta


Ingredients:

6 cloves garlic (you can also use garlic confit!)

1 cup polenta

2 1/2 cups chicken broth

1/2 cup parmesan cheese

2 tsp salt

pepper

olive oil


Directions:

  1. In a large pot add olive oil and garlic sauté a few minutes until fragrant.

  2. Add in the chicken broth and bring to a simmer

  3. Add in the polenta and whisk vigorously to prevent lumps.

  4. Let cook, mixing frequently for about 15 minutes.

  5. Add in the Parmesan and a drizzle of olive oil. Add pepper to taste

  6. To serve, garnish with more olive oil, pepper, and parmesan.
