German Spätzle with Caramelized Onions

Ingredients


2 white onions, sliced thinly

2 tbps extra virgin olive oil

1 tsp salt


1 1/2 cups flour

1/4 tsp nutmeg

1/2 tsp salt

3 eggs

1/2 cup milk

4 tbsp butter



Directions

  1. In a large heavy bottomed pot add olive oil to medium heat. Add in onions and salt let cook, stirring occasionally for 25 minutes until caramelized and brown. Remove and set aside when done

  2. In a mixing bowl, whisk together flour salt and nutmeg. Add in three eggs and milk, whisking to combine a batter that resembles pancake batter.

  3. Bring a pot of salted water to a rolling boil.

  4. Using a colander/strainer that has small holes, spoon 1/2 cup of the batter into and let it drip over the hot water to form small noodles.

  5. Let boil for 2 minutes, until they float to the top. Remove from pot and set aside. Continue with the rest of the batter until completed.

  6. In the pot used for the onions, add in 4 tbsp of butter and melt over medium high heat. Add in the noodles and let them become golden brown, stirring occasionally for 5 minutes.

  7. Place noodles in serving dish and garnish with caramelized onions.
