Indonesian Chicken Sate with Katajang (Peanut) Sauce



Peanut Sauce:

1 white onion, roughly chopped

5 garlic cloves (minced)

1-inch piece ginger (minced)

1 tbsp brown sugar

Canola oil

1 tbsp Sambal oelek

1 tsp paprika

1 cup peanut butter

3 tbsp kecap Manis

1 cup milk

1 tbsp lemon juice


Chicken Skewers

8 Chicken breasts, cut into bite sized cubes

Salt

Pepper

Oil (Canola or Avocado)

Wooden Skewers


Directions:

1. In a bowl combine onion, garlic, ginger, and brown sugar, and blend into a paste using a mortar and pestle or immersion blender.

2. In a pot, add oil and sauté paste on medium high heat for 5 minutes.

3. Add in sambal, spices and peanut butter, cook until the peanut butter become a darker shade.

4. Slowly whisk in milk, add lemon juice and kacap manis

5. Skewer chicken, season with salt and pepper. Drizzle with oil

6. Bake chicken at 350 degrees for 20 minutes until slightly browned

7. Serve with sauce.
